Navajo Tacos

     Hey guys! Lately, people have been asking me to post my recipes online since I have been posting what I have been cooking on my social medias. Since we have been quarantines for 3 weeks, and are now on lockdown, I have been cooking more than usual. For this week's post, I will be sharing one of my favorite southwestern foods. Keep note, this recipe is only six servings. So, what is a Navajo Taco?      Navajo Tacos is a southwestern dish. I found the recipe in a book my family bought when we traveled out west a few years ago. To me, the Navajo Taco is basically a taco salad on fried bread.  What is Fry Bread? Fry Bread is an Indian bread that is flat. The bread is fried in olive or vegetable oil. When I first tasted it, it tasted like a funnel cake minus all the powdered sugar on top. Risotto and Italian Grilled Chicken

     Hey guys! Yesterday for supper, I made a new dish. I will be showing all that I made in this new post.      The chicken was very easy to make. I coated them with Italian seasoning, rolled them in the eggs and then the bread crumbs. I grilled the chicken in the oven, and it did not take long. The chicken kinda reminded me of chicken parmesan. They were so good!       For the vegetables, I salted and peppered asparagus, and baked them for about fifteen minutes. The asparagus was so good as well.      The best part of the meal was the Risotto. I used to not like Risotto because it was always cooked with lemon juice. I hated the taste. Risotto is Italian rice. It is not very hard to make. It just needs a lot of time and effort.      The first step is saute'ing the onions. This takes about 2-3 minutes. Next, have 4 cups of chicken broth for the rice. Add the rice to the onions, and add 1/2 of a cup at a time until the rice as absorbed. This can take 25-0 minu

Breakfast Supper

  So, tonight's supper was a lot different. Tonight I made a breakfast supper. The full meal I cooked was homemade buttermilk biscuits, country pleasing sausage, cheddar cheese grits, and fried eggs.      For my biscuits, I used a bowl of flour. Inside the flour, I made a small well. Inside the well, I pour a cup and 1/4 of buttermilk with one stick of butter. I carefully squeezed and mixed together.       Next, I began to add small bits of flour into the mixture. After adding in the flour, I began to knead the dough until it was completely smooth. After it was smooth, I began to tear eight pieces off the dough and rolled them in my hands into equal balls.       I preheated the oven to 400 degrees, and then put the biscuits into the oven. I baked them for 20 minutes, but then an extra five so the biscuits could be a little browner on top.       After they were done baking, I dumped the biscuits onto a plate to be served.
